Soy Sauce Making:
Wash and sort 4 cups (950 mL) of SoyBeans. Soak the SoyBeans overnight.
Boil the SoyBeans on medium-high heat for 4-5 hours. Mash the SoyBeans into a paste.
Mix 4 cups (950 mL) of wheat flour with the Soybean paste.
Add koji starter to your Soybean mixture and mix well.

How is traditional Soy Sauce made: Traditional Soy
Sauces are made by mixing SoyBeans and grain with mold cultures such as Aspergillus
oryzae and other related microorganisms and yeasts (the resulting mixture is called
"koji" in Japan; the term "koji" is used both for the mixture of SoyBeans, wheat,
and mold as well as for the mold itself).
